Dutch Baby (German-Style Pancake)

This is a German-born hybrid between a crepe, creme puff, and pancake.

Ingredients: 3 servings

80 g
1/2 teaspoon
120 ml
Vanilla extract
a small amount
2 tablespoons
Powdered sugar
as needed
Lemon juice
1/2 a lemon


1. Preheat the oven to 220°C. Place a frying pan (I recommend a cast iron) or heat-resistant dish in the oven to warm.
2. Put the flour and salt into a bowl. In a separate bowl, combine the room temperature egg, milk, and vanilla essence.
3. Gradually add the egg mixture into the bowl with the flour while continuously stirring.
4. Once the batter has been made, melt some butter in the warmed frying pan.
5. When the butter has melted, pour in all of the batter and shut the lid of the oven.
6. Don't open the oven while it's baking.
7. Bake it for about 13-18 minutes, until it has browned.
8. Squeeze the lemon on top and dust with powdered sugar.
9. Slice and serve while it's still warm.
