Vegetarian Mayonnaise (refer to Recipe ID: 1344091)
Rinse off the dirt well from the Jerusalem artichokes, and cut the carrots into large bite-sized chunks. Add a bit of water to a pot, cover tightly with a lid, and steam.
Evaporate the water once the Jerusalem artichokes become hot and soft, and add in the sprouts and vegetarian mayonnaise. It's done. ♪
You will have a vitamin B12 deficiency if you switch to a vegetarian diet, so I recommend using broccoli sprouts. It seems that beets are also high in vitamin B12.
You can also get B12 from nori seaweed or nutritional yeast.
Story Behind this Recipe
This is one of the medical recipes on my mom's medical menu after she suffered a stroke due to chronic diabetes.
The doctor said she would have to be hospitalized and treated there, but Yujiro Tojo's natural health methods have kept her alive and healthy to this day. This is a recipe that people with conditions such as high cholesterol or diabetes can eat.
Natural insulin from Jerusalem artichokes is used as a medical remedy in Germany and Hungary. I searched for Jerusalem artichokes domestically, and I bought them from a location that popped up. They might have only Jerusalem artichoke powder this year.
