Easy Warming Turnip and Soy Milk Soup

Easy Warming Turnip and Soy Milk Soup

Enjoy the distinctive aroma and the mild natural sweetness of turnip in this warming soy milk soup.

Ingredients: 3-4 servings

1 medium (around 150 g)
400 ml
Soy milk
300 ml
100 g
Western-style soup stock (I used Maggi brand bouillon)
2 cubes
to taste
Black pepper will spoil the taste of the turnip, so it is not recommended.

1. Peel the turnip and slice into 8 pieces. Put them in a saucepan, add the water and soup stock, and simmer until tender over medium heat.
2. When tender, let it cool down before blending it with the tofu in a blender. (Make sure you let it cool down first; otherwise it can be dangerous.)
3. Return the blended turnip and tofu to the saucepan and add the soy milk. Heat it just enough to warm, but don't let it boil. Season with salt, and it's done.

Story Behind this Recipe

I wanted to make something simple and warming with turnip, and thought soup might be best.
