Cut the greens and tofu to a size of your liking.
Cut the chicken thigh meat into bite sized pieces and sprinkle with just a little bit of sake.
Fill an earthenware or iron pot with the water and soup stock and heat. Once the water starts boiling put in the chicken and the ▼ ingredients. Then when it starts to boil again add in the tofu, put the green in right before serving.
Check to see if it needs more salt, otherwise once the ingredients have been fully cooked it's ready.
Don't forget to skim the scum on the surface.
Garnish with scallions and ginger.
