Heat oil (not listed) in a pan and brown the ground meat.
Add mixed beans and stir-fry.
Add canned tomatoes. Stir and bring to a boil.
Add water according to the instructions on the roux packet, but deduct the amount of canned tomatoes already added. I put in even less because we like the curry thick.
Turn off the heat, break the curry roux, and add to the pan.
It's delicious with chopped onions if it isn't too much trouble to use a knife.
Story Behind this Recipe
When I couldn't bother to cook, I came up with this easy yet tasty curry without using a knife.
You may only be able to find a packet of curry roux to make 8~10 servings. In that case, stick to 6 servings list of ingredients for half the packet and the 12 servings list for the whole packet. It doesn't take much time to cook as you use ground meat and canned mixed beans. I make 6 servings worth for two of us, and I use the rest to make doria (rice gratin). It's perfect for doria!
