Cut the pork into easy to eat pieces. Make small cuts in the fat.
Heat sesame oil in a frying pan and fry the meat. Sprinkle the sugar over the meat, and stir fry while coating the meat with the sugar until the meat changes color.
Add 2 tablespoons of mentsuyu, 1 tablespoon of mirin and grated garlic to the pan and rapidly reduce the glaze over high heat.
Serve rice in a bowl and top with torn nori seaweed. Lay the meat slices on top and pour over the leftover glaze. Sprinkle with sesame seeds and it's done.
Story Behind this Recipe
My children loves this pork rice bowl. Instead of soy sauce I use mentsuyu, which has more umami and goes better with the dish. Coat the pork slices in the thick glaze so that it seasons the sheet of nori as well.
When frying the meat, add sugar at the same time and fry thoroughly. This helps to bring out the rich flavor. Cook down the glaze over high heat as soon as you add the mentsuyu sauce and mirin. It's best when the glaze is thickened a bit and the meat is well browned.
