Orange Simmered Artichokes (Turkish Homemade Cooking)

In Turkey, Jerusalem artichokes are called "Yer elmas."
They are known as the "apples of the ground" and are a very commonly used vegetable.

Ingredients: 4 servings

Jerusalem artichoke
300-350 g
1 (120 g)
1 (120 g)
1 (150 g)
★Rice (washed)
2 tablespoons
1 teaspoon
1/2 teaspoon
★Orange (squeezed)
1/2 (40-50 ml)
★Lemon (squeezed)
1/2 (10-20 ml)
★Olive oil
30 ml
600 ml
Dill (optional)
to taste
Olive oil (for stir frying)
1 tablespoon


1. Thinly slice the onion. Peel the skin from the other vegetables and cut into 1.5 cm bite-sized cubes.
2. Heat oil in the pot and cook the onion until tender.
3. Add the remaining vegetables and lightly stir-fry.
4. Add the ★ ingredients. Cover with a lid and simmer until the vegetables are tender (about 30 minutes).
5. Arrange on a dish and garnish with chopped dill to finish.
6. In Turkey, this is typically served chilled, but since artichokes are in season in the winter, I like to eat it warm.

I wanted to post this recipe last winter from Turkey, but I wasn't able to.
I found some artichokes at the co-op the other day, which made me recall this recipe.
