Cut up the potatoes with the skins still on into bite sized pieces. Put in a heatproof dish, cover with plastic wrap and microwave until a skewer goes through easily. I microwaved them for 3 minutes at 1000w.
Cut the onion into 1 cm wide wedges.
Cut a slit into the backs of the shrimp, and remove the digestive tract.
Combine the ● ingredients.
Put the sesame oil and the ☆ ingredients in a frying pan and turn on the heat.
When it starts to smell fragrant add in the shrimp and cook on both sides. They don't have to be cooked through at this point.
Add the onion and stir fry until wilted.
When the onion and shrimp are cooked, add the potato pieces, stir fry quickly and turn off the heat.
Add the combined sauce ingredients, mix together and it's done.
Transfer to serving plates, sprinkle with parsley to taste, and enjoy.

I wanted to eat shrimp in chili sauce, but I only had a little shrimp...but I had lots of delicious potatoes...so why not mix them together?
Please adjust the microwaving time depending on your microwave oven. Putting a slit down the back of the shrimp, will make them curl up nicely.
The potatoes are used with their skins on, which prevents them from falling apart when you stir fry them. Use plenty of shrimp if you have them.
