Lobster Thermidor

I live in Canada, the home of lobsters. I heard the sauce recipe from a restaurant and added cheese to get a richer taste.

Ingredients: 1 lobster

1 (about 1 kg)
For the sauce:
Butter and flour
1 tablespoon each
1 cup (200 ml)
2/3 teaspoon
1/2 teaspoon
a small amount
Parmesan cheese
2 tablespoons


1. Heat butter in a pot and add the flour.
2. Add the milk and once it becomes smooth, add the salt, pepper, nutmeg, and Parmesan cheese to season. Set aside to cool.
3. Remove the meat from the lobster. Remove the claws and tail. Cut the body in half.
4. Remove any meat from the body, claws, and legs, and cut any large pieces into bite-sizes (now the plate looks full).
5. Mix the meat with the chilled sauce from Step 2.
6. Fill the lobster shells with the mixture and bake in the oven at 200℃ for 15 minutes. It's done.
7. The lobster shell is now stuffed with meat. It's very plump, creamy, and delicious.

Story Behind this Recipe

I recreated the sauce recipe I got from a restaurant and rearranged it use ingredients on hand. The taste is more authentic if you use heavy cream and sherry wine.
