Rich Yet Refreshing! Simple No-Bake (Rare) Cheesecake

The tartness of the yogurt is really nice in this!
Just as the title says, this is a "rich yet refreshing" no-bake or rare cheesecake.

Ingredients: 15 cm round mold

For the batter:
Cream cheese
200 g
Plain yogurt
200 g
Coffee cream
40 ml (optional)
70 g
Lemon juice (you can use concentrate)
2 1/2 tablespoons
Powdered gelatin
5 g
Hot water (to soak the gelatin)
3 tablespoons
For the base:
Plain cookies (Marie Biscuits)
35 g
Granulated sugar
1 1/2 tablespoons


1. Break up the ingredients for the base finely in a plastic bag. Do this until the mixture is moist. Tip: Return the butter to room temperature before you add it!
2. Press the base mixture firmly into the bottom of the mold. Chill in the refrigerator.
3. Put the cream cheese in a bowl, warm for about 30 seconds in the microwave, and stir. Add the yogurt and coffee cream, and stir some more.
4. Add the sugar in 2-3 batches to the Step 3 bowl. Add the lemon juice and mix.
5. Heat the soaked gelatin over a hot water bath until it's liquid. Mix this rapidy into the Step 4 mixture, and pour into the chilled mold from Step 2.
6. Refrigerate for 2-3 hours and it's done. Be careful when removing the cake from the mold!
7. This is delicious eaten topped with blueberry or raspberry sauce!

I like rich and thick no-bake cheesecake, but I also like the light version as well.
I made this using some yogurt I had in the fridge.
It is a simple recipe that you can make in no time.
