Clear Soup with Tofu and Enoki Mushrooms

This is a clear soup (suimono) that goes well with grilled fish. It's a little bit sweet and very mild.

Ingredients: 4 servings

1 block
Enoki mushrooms
1 pack
Dashi stock
4 to 5 cups (800 to 1000 ml)
※ Sake
3 tablespoons
※ Mirin
1 tablespoon
※ Salt
1/2 to 1 teaspoon
※ Usukuchi soy sauce
2 tablespoons
Green onion
To garnish


1. Cut the enoki mushrooms into 3 even lengths, and shred apart. Cut the tofu into 2 cm cubes.
2. Bring the dashi stock to a boil and add the ※ ingredients. Add the enoki mushrooms and tofu and bring to a gentle simmer again.
3. Serve in bowls scattered with some chopped green onion.
