Yanagawa-Style Beef

Once you finish shredding the burdock root, the rest is easy. It's a quick-prep dish that can be made in a frying pan.

Ingredients: 2 servings

Thinly sliced beef
200g or more
Burdock root
●Soy sauce
a scant 3 tablespoons
2 tablespoons
1 tablespoon
2 tablespoons
Vegetable oil
as needed


1. Shred the burdock root and soak in a bowl of water, then drain.
2. Heat the oil in a frying pan, add the burdock root and stir-fry over high heat.
3. Once the burdock root has wilted, add the ingredients marked ●.
4. Place the beef on top of the burdock root without mixing, until it the beef cooks through. This should be done over medium heat.
5. Once the beef cooks through, evenly pour in the beaten eggs and cover the pot with a lid. Turn off the heat.
6. Once the eggs are soft set, it's done.

Story Behind this Recipe

Loaches prepared Yanagawa-style are not my bag, so I used beef instead.
Beef and burdock root complement each other well.
