[Farmhouse Recipe] Celebratory Red and White Namasu (Marinated Daikon and Carrot Salad)

A regular fare of traditional Japanese New Year's celebratory meals. The small amount of Chinese citrus (yuzu) peel and konbu (kelp) help to bring out the flavors. It keeps in the fridge for 1 week.

Ingredients: 4 to 6 servings

Daikon radish
500 g
Carrot
50 g
Salt
1 heaped teaspoon
[A]
Vinegar
4 tablespoons
Sugar
2 tablespoons
Julienned yuzu citrus peel
to taste
Julienned kombu
to taste

Steps

1. Julienne the daikon and carrots. (I used a slicer.) Add salt, mix and let sit for 10 minutes.
2. The water content will be released after 10 minutes, so squeeze out excess water.
3. Add ingredients from Step 2 to [A] and mix thoroughly.
4. Store in a container and let sit for a day until the flavor is well blended and serve.
