Stir-Fried Chicken and Kamatsuna with Curry Mayonnaise

A delicious dish made with inexpensive chicken breasts! katakuriko makes the chicken soft and tasty. You can use chicken thighs as well.

Ingredients: 4 servings

Chicken (breasts, tenders, or thigh meat)
1 portion
1 bunch
Chicken seasoning
2 teaspoons
1/2 teaspoon
1 tablespoon
☆Vegetable oil
1 tablespoon
Stir-fry seasoning
a dash
1 tablespoon
※Curry powder
1 ~ 2 teaspoons
2 tablespoons


1. Slice the chicken into bite-sized pieces on the diagonal. Season with the sake and salt. Then rub in the katakuriko and vegetable oil.
2. Parboil the komatsuna, and cut into 3-4 cm lengths.
3. Stir-fry the Step 1 chicken. When the surface is browned, sprinkle with a dash of salt, and 1 tablespoon of sake. Cover with a lid, and steam-fry.
4. When the chicken is cooked through, add the curry powder and mayonnaise, and mix. Add the komatsuna at the end, briefly mix, and you're done.

Story Behind this Recipe

I came up with this recipe when the only ingredients I had were chicken breasts and komatsuna. Upon tasting, it was really delicious, and I've made it several times since.
