Chicken Cutlets in Sweet-Savory Sesame Sauce

Fried chicken cutlets coated with a sweet-savory sauce. It goes very well with rice!

Ingredients: 2-3 servings

For the chicken cutlets
Chicken breasts
☆ Egg
☆ Cake flour
3 tablespoons
☆ Salt and pepper
a little of each
As needed
Frying oil
As needed
For the sauce
■ Concentrated dashi stock
1 1/2 cups (300 ml)
■ Sake
3 Tablespoons
■ Mirin
3 Tablespoons
■ Soy sauce
3 Tablespoons
■ Honey
1 tablespoon
■ Ground sesame seeds
3 Tablespoons
Finely sliced green onion
A small amount


1. In a bowl, whisk the ingredients marked ☆.
2. Take the skin off the chicken breast and pierce it all over with a fork.
3. Dip the chicken in the egg mixture, and coat with panko.
4. Fry in oil at 320-340°F/160-170°C until golden brown.
5. Drain, and slice into easy to eat pieces.
6. Add the ingredients marked ■ in a pan and bring to a boil, then add the chicken from Step 5. Use a spoon to thoroughly coat the chicken with the sauce while simmering for 5 minutes.
7. Transfer to a serving dish, pour the remaining sauce from the pan over, and scatter chopped green onions on top.

Story Behind this Recipe

I had some delicious tonkatsu simmered in sauce at a Japanese restaurant, and I wanted to recreate it using chicken. It's a very satisfying dish.
