Rich and Tangy Miso Hot and Sour Noodle Soup

I had some miso to sour and spicy noodle soup. Even though it's tangy, it's also very rich. Use as much ra-yu chili sesame oil as you like.

Ingredients: 1 generous serving

☆Miso
2 tablespoons
☆Mentsuyu
2 tablespoons
☆Soy sauce
1 tablespoon
☆Chicken soup stock granules
3 teaspoons
☆Grated garlic
Plenty, to taste
☆Grated ginger
1 thumbnail's worth
☆Sugar
1 teaspoon
Water
600 ml
Chinese-style noodles
1 bundle
Vinegar
2 to 4 tablespoons
Sesame oil
a small amount
Salt and pepper
to taste
Ra-yu
to taste
Egg
1
Katakuriko slurry
as needed

Steps

1. Put the ingredients marked with ☆ in a small saucepan, then add the water little by little while mixing to dissolve the miso paste. Place the pan on the stove and heat. Boil the noodles.
2. Once the soup is bubbling, add the dissolved katakuriko to thicken the soup, then pour the beaten egg in. Add the vinegar and mix the soup quickly before adding the salt, pepper and sesame oil at the end.
3. Add the noodles and as much ra-yu chili sesame oil as you like.
4. I made this with white miso. It was super delicious too.
