Quick and Easy Tomato Cream Simmered Cod

Quick and Easy Tomato Cream Simmered Cod

You can make this fish dish in a frying pan in just 10 minutes. The sauce is so delicious, we scoop it up with bread and eat it all.

Ingredients: 2 servings

2 pieces
1 clove
Onion, carrot, paprika, celery
1/2 each
Herbs (optional)
1 teaspoon (I used fennel seeds)
Tomato sauce
1 cup (200 ml)
1/2 cup - 100 ml

1. Cut up all the vegetables into 1 cm dice. Slice the garlic. Season the cod with salt and pepper, and dust lightly with flour.
2. Heat some oil in a frying pan. Pan fry the cod on both sides until browned, then take both pieces out.
3. Add a little oil to the frying pan, add the fennel seeds and garlic and saute until aromatic.
4. Add the cut up vegetables and saute until cooked. Add the tomato sauce and the cooked cod filets, and simmer for about 5 minutes over medium heat.
5. Add the milk at the end, simmer briefly and it's done.

Story Behind this Recipe

I had some tomato sauce, so I used it for a fish recipe that goes well with bread.
