Slice the sweet potato 5mm thick and soak in water to get rid of any bitterness.
Place the drained sweet potato, milk and sugar in a pan and heat. In the meantime, whisk the flour until there are no lumps.
When the pan comes to a boil, cook over medium to low heat for 12 to 15 minutes until the sweet potatoes are soft.
Mash the potatoes. Using a masher is easiest, but you can also use a fork or spatula
Add the butter and flour.
It's done when the butter has melted.
Place the Step 6 mixture onto a piece of plastic wrap.
Wrap it up and microwave for 4 minutes (at 730w). * The butter will melt out and make the dough slippery, so be careful.
Shape the dough into a roll using a sushi roll mat.
Secure both ends with rubber bands, and stand the sushi mat on end to cool. Place in the refrigerator when the dough has cooled slightly.
It should look like this.
Slice into 3cm pieces. ＊ It's easier to slice when chilled.
Line the a toaster oven baking tray with parchment paper, and arrange the pieces sliced in Step 12.
Bake for 6 to 10 minutes. ＊ It took 6 minutes at 1000w power.
Shift the pieces around so that they brown evenly.

In step 8: After microwaving, the butter will melt out and the dough may slide off the plastic wrap, so be careful. In step 10: The shape will hold better and it will be easier to slice if you chill it in the refrigerator.
