Easy Kabocha Soup in a Blender

A rich and delicious soup that brings out the sweetness of kabocha squash. As it's made in a blender it's super-quick.

Ingredients: 2 servings

Kabocha squash
400 ml
Soup stock cube
Salt and pepper
small amount


1. Cut the kabocha squash into 3 cm pieces. Finely chop the onion.
2. Place the kabocha squash and onions on a plate. Cover with plastic wrap and microwave for 5 minutes.
3. Put all the ingredients in a blender and purée for 1 minute.
4. Strain the soup to remove the kabocha skin and onion roots.
5. Discard the skin and roots. Transfer the soup to a pot and heat for 1-2 minutes. Season with salt and pepper, and it's ready to serve.
