Foolproof Soy-sauce Seasoned Eggs

Soft-boiled eggs are a must-have for ramen restaurants! Enjoy these soft-boiled seasoned eggs.

Ingredients: 10 eggs

Soft-boiled eggs
Soy sauce
80 ml
120 ml
200 ml
1 teaspoon


1. Make the soft-boiled eggs. To learn how to make them, refer to Recipe ID: 1283774.
2. Put the sake and mirin into a pot and cook off the alcohol.
3. Once the alcohol has evaporated, add the soy sauce. Right before it begins to boil, add the sugar and turn off the heat.
4. Leave the pickling sauce to cool to room temperature. (If it's hot, the eggs will continue to cook.)
5. Pour the sauce into a container and place the eggs in it. Leave in the refrigerator for a day and they're done!
