Lemon-flavored Grilled Burdock Root and Ginkgo Nut Marinade

The combination of crunchy grilled burdock root and comforting ginkgo is really tasty. The lemon-flavored marinade gives it a light taste, so you can eat lots!

Ingredients: 2-3 servings

Burdock root
Ginkgo nuts
about 20
★Olive oil
2 tablespoons
★Lemon juice
from 1/2 a lemon
★Lemon zest
from 1/2 a lemon (the one you squeezed)
★Salt and pepper
to taste


1. Shave the burdock root skin with the back of a knife, and cut into 5 cm lengths with a thickness of 5 mm.
2. Make slight cracks in the ginkgo nuts, put 10 in a brown envelope and microwave. Repeat once, then remove the shells and membranes.
3. Thinly peel the lemon peel, and finely chop.
4. Coat a frying pan with vegetable oil (not listed) and cook the burdock root until well-browned.
5. When done, add the ginkgo nuts and mix them lightly in the oil.
6. Transfer the burdock and ginkgo nuts to a bowl and mix in the ingredients marked ★. Leave it for a while to allow the flavours to blend, then it's done.

Story Behind this Recipe

I've become obsessed with making burdock root dishes recently , and I was given lots of ginkgo nuts. I wondered if I could make a tasty dish using both ingredients, so I tried adding the nuts to my usual burdock root marinade. It turned out surprisingly delicious, so I uploaded the recipe!
