Chinese Stir-Fried Malabar Spinach (Tsuru-Murasaki)

While malabar spinach has a slightly strong flavor, it is packed with nutrients and certainly a vegetable to try. This is how we always prepare it in my home.

Ingredients: 2 to 3 servings

Malabar spinach
14 stalks (each about 15 cm long)
Maitake mushrooms
175 g (1 pack)
Sliced beef (shoulder loin)
150 g
1 large clove
Sesame oil
2 tablespoons
● Water
100 ml
● Cooking sake
50 ml
● Chicken soup stock granules
1 teaspoon
● Oyster sauce
1 tablespoon
● White sugar
1/2 teaspoon
Katakuriko slurry
1 tablespoon potato starch with 3 tablespoons water


1. Mince the garlic, shred the maitake mushrooms and cut the meat into bite-sized pieces. Combine the ● ingredients.
2. Separate the leaves from the stalks of the malabar spinach.
3. Diagonally slice the stalks.
4. Put sesame oil and garlic in frying pan, turn on the heat, and when the aroma has released, add the meat. When the meat has cooked halfway through, add the maitake and spinach stalks, then sauté.
5. Once the sautéed ingredients have cooked through, add the leaves, sauté until tender, then pour the seasoning made from the ● ingredients in a circular motion, and toss.
6. Shift the sautéed ingredients to the side of the pan, then add the katakuriko dissolved in water, briskly mix until the sauce thickens, evenly coating the ingredients, then serve.

Story Behind this Recipe

I used to only prepare malabar spinach Japanese style, but it was always somewhat unappetizing. Then, when I added it to Chinese stir-fry, it turned it really good. So now, whenever we have malabar spinach, I always fix it this way.
