Nostalgic Sweet Potato Croquettes

These were one of my favorite items as a child. They have a subtle sweetness and taste great served either piping hot or cold. Perfect as a bento item or as a snack.

Ingredients: Makes 6 to 8 croquettes

Sweet potato, medium sized
1 (about 300 g with skins)
a pinch
10 g
Plain flour
as needed
Egg beaten with water
as needed
Sesame seeds (black or white)
as needed
the same amount as the sesame seeds (i.e. if using 50 ml of sesame seeds, use 50 ml of panko)


1. Cook the sweet potatoes however you like. I toss cut and skinned sweet potatoes in a rice cooker, add 1 tablespoon water, then press "start." It's an easy way to make sweet sweet potatoes.
2. Mash the sweet potatoes while hot, then add the butter and salt. If it appears too dry, add hot water until it can be gathered into a ball, then knead until smooth.
3. Form into your choice of patty shapes, then dredge first in flour, then water, and then the egg mixture. Mix together the sesame seeds and panko and coat the patties.
4. Add the patties to the heated oil and deep fry until it reaches a nice golden brown.
