Easy & Low-Cal Okara Scones

You only need three ingredients to make these scones easily. See Recipe ID: 1418989 for a kabocha squash version.


Fresh okara
150 g
Pancake mix
150 g
30 g
Raisins, chocolate chips, or filling of your choice


1. Mix the three main ingredients together. I put them in a plastic bag and rub them together.
2. When the ingredients have mixed, stretch the dough out to a thickness of 1.5 - 2 cm and stamp out shapes with a cutter. They don't expand that much when baking, so cut to them to the thickness you want them to be when cooked.
3. Bake in the oven for 20 - 30 minutes at 170-180°C.

Story Behind this Recipe

I'm addicted to okara scones which are popular at the moment. I tried making them many times, and wondered if I could make them more easily with pancake mix. They are delicious, but in a very different way to the ones I usually make, so I uploaded this recipe. These are crispy and fluffy.
