Simple Rösti (Hash Browns)

This is a common Swiss potato recipe. These rösti hash browns have a crispy outside and a soft inside. The trick to this recipe is to boil the potatoes, then let them cool before further use.


Potatoes (medium)
Grated cheese
1 dessert spoon
Salt and pepper
to taste
1 dessert spoon


1. Shred the potatoes in a food processor. If the earthy smell of the potatoes bothers you, rinse them under water.
2. Sprinkle on salt and pepper and heat the potato in a microwave until tender. Leave to cool.
3. Mix in the grated cheese and continue to mix while mashing.
4. Melt the butter in a frying pan, then add the mixture from Step 3 and form them into pancakes.
5. At first, the rösti may break apart easily, so press down on them firmly with a spatula.
6. Cook the rösti until golden, flipping occasionally. When both sides are crispy, they're done.

Rösti is a common potato dish from Switzerland and Germany. I toned down the amount of butter and cheese to make a light and simple variety. Serving with sausages.
