Slice the cucumbers 1 mm thick, lightly rub with salt, then drain the excess water.
Slice the pears 2 mm thick, then into bite sizes. Mix the pear and cucumber slices in a bowl and toss with mayonnaise.
Sprinkle with black pepper and lemon juice and it's ready to serve.
Story Behind this Recipe
I made this when I didn't have an appetite. Use this recipe with apples, pears, or persimmons for a tasty seasonal salad. It's also tasty with the juice that comes out of the fruit after chilling it in the fridge.
When transferring to serving dish, a dash of black pepper will add a nice touch. Surprisingly, even after being stored in the refrigerator the moisture from the pears and the wilted cucumbers keeps it tasty.
