Easy Moist Sweet Potato Muffins

Easy recipe using seasonal Asian sweet potatoes, and just one bowl.

Ingredients: 6~7 muffin cups

Asian sweet potato
300 g
100 g
90 g
Heavy cream (or milk)
50 ml
★Plain flour
3 tablespoons
★Baking powder
1 teaspoon
Black sesame seeds
1 tablespoon


1. Shift together the ★ marked ingredients.
2. Melt the butter in the microwave.
3. Peel the potato and cut into 1cm slices. Place on a microwave safe bowl and put in the 600 W microwave for 6 minutes. The potatoes should be pierced easily with a toothpick. Mash the potatoes.
4. Preheat the oven to 180℃
5. Add the sugar and melted butter to the mashed potatoes and combine with a whisk.
6. Add the heavy cream (or milk) and combine.
7. Add the egg and the black sesame seeds and combine.
8. Fold in the shifted ★ingredients until it is mixed in well.
9. Add the butter to the muffin cups and bake in the oven for 20~25 minutes.
10. Done.
11. With lots of black sesame seeds.
