Fall Bounty Rice with Sweet Potatoes and Mixed Grains

Fall Bounty Rice with Sweet Potatoes and Mixed Grains

If you use a packet of mixed-grain mix (zakkoku mix), this ends up being super-easy. By just cooking them in a rice cooker, even sweet potatoes that are lacking in sweetness become sweet - it's strange, but utterly delicious!

Zakkoku or mixed-grain mix for cooking with rice
1 packet (a small handful)
Uncooked white rice
2 rice cooker cups (360 ml)
Japanese sweet potato
1/2 (about 200 g with the skin on)
a pinch
Gomashio (sesame salt)
To finish

1. Peel the sweet potato, cut into bite sized pieces, and put in a bowl of water.
2. Rinse the rice, put into the bowl of the rice cooker, add water up to the 2 cup level, and leave to soak.
3. Add the mixed grains.
4. Add a pinch of salt, mix lightly, put the sweet potato pieces on top and switch on the cooker.
5. When it's cooked, transfer to rice bowls, sprinkle with some sesame salt and enjoy!
