Pork, Eggplant and Bell Pepper with Sesame Miso Sauce

The ratio to all the ingredients is 1. Double the ingredients for 4 servings.

Ingredients: 2 servings

Eggplant (slim Japanese type)

Green bell pepper

Thinly sliced pork
100g
Vegetable oil
As needed
Sesame seeds and miso sauce
● Sake
1 tablespoon
● Mirin
1 tablespoon
● Miso
1 tablespoon
● Ground sesame seeds
1 tablespoon
● Water
1 tablespoon

Steps

1. Cut the eggplant and bell pepper into rolling wedges. Soak the eggplant in water for a while to remove the harshness.
2. Combine the ● ingredients.
3. Cut the pork into suitable sizes.
4. Pour vegetable oil to a frying pan, and heat on medium to stir fry the pork.
5. When the pork has browned, add the drained eggplant and bell pepper and keep stir frying.
6. When the eggplant and bell pepper are well-cooked, add the Step 2 sauce and boil down.
7. Serve on a plate and it's done.
