Miso Udon Noodle Hot Pot

The soup broth is very thick and rich seasoned with 2 kinds of miso.

Ingredients: 2-3 servings

Dashi stock
800 ml
★Hatcho miso (or red miso)
2 tablespoons
★Blended miso
2 tablespoons
★Gochujang
2 teaspoons
★ Sake
2 tablespoons
★Mirin
2 tablespoons
★Grated ginger
1 knob
Pork belly (thinly sliced)
150 g
Chinese cabbage
1/8
Daikon radish
1/4
Carrot
1/2
Japanese leek
2
Maitake mushrooms (enoki or shimeji mushrooms)
1 packet
Kamaboko
1/3
Cooked udon noodles
2 portions
Eggs

Steps

1. Cut all the vegetable into bite sizes. Warm the dashi stock in an earthenware pot.
2. After the dashi comes to the boil add the ★ ingredients (dissolve the miso well). After bringing to the boil, add the vegetables (put vegetables that take longer to cook first). Add the pork.
3. When the vegetables are tender, add the udon to cook. Tip the eggs on top and cook to your liking. Done.

One day I felt like eating stewed miso udon. I looked up the Stewed Chicken Breast and Vegetable with miso (Recipe ID:947234) and arranged a little to make this udon noodle hot pot.
