Salt and Butter Hot Pot with Salmon and Vegetables

This is a healthy hot pot with salmon and vegetables. It is light but with a rich salt and butter flavour.

Ingredients: 2-3 servings

Lightly Salted Salmon
4 fillets
Chinese cabbage (or cabbage)
Bok choy
1 pack
Shiitake mushrooms
Shimeji mushrooms
1/2 bunch
Wiener sausages
1 pack
Corn kernels
3 tablespoons
700 ml
2 tablespoons
2 tablespoons
☆Chicken stock granules
1.5 tablespoons
☆Sea salt
2/3 teaspoon
15 g


1. Cut the fish and vegetable into bite sized pieces.
2. Put ingredients marked ☆ in an earthenware pot and bring to simmer. Add ingredients that take longer to cook through first and gradually add more ingredients to the hot pot.
3. Cover the lid and simmer over low to medium heat until all ingredients have cooked through. Drop butter in at the end and melt. Done.

Story Behind this Recipe

Because I had a lot of salmon, I decided to cook my favourite salmon hot pot. I usually prepare a robust miso or soy sauce broth hot pot, but this time I opted for a lighter, salt broth.
