Oatmeal and Coconut  Cookies

The chewy and crunchy texture of these cookies and the amazing flavour that fills your mouth as you eat makes these so addictive! Just mix and bake! No eggs or milk needed.

Ingredients: 1 baking tray's worth

☆ Oatmeal
70 g
☆Cake flour
30 g
30 g
a pinch
Canola oil
2 tablespoons
2 tablespoons
Dried and shredded coconut
30 g
Dried fruits (Raisins, prunes, figs etc.)
20 g


1. Grind the oatmeal in a blender. Cut the dry fruits to the size of raisins.
2. Mix the dry ingredients marked with ☆.
3. Add oil to the mixture from Step 2. Rub together and then mix.
4. Add water, and when it's no longer floury, add coconut and dried fruit and combine together.
5. It will be crumbly and difficult to hold together, but press firmly with your fingers and shape into 1 cm rounds.
6. Bake in a 320F/160C oven for around 30 minutes.

I love the texture of oatmeal and coconut so I combined them and made these treats while referring to my favourite chef's recipe.
