Ingredient-packed Croquettes

This is my favorite croquette recipe and I have been making these for about 10 years.

Ingredients: Makes 4 croquettes

Potato
1 big one ( about 100 g to 120 g)
Ground pork
100 g
Onions
1/4
Carrot
2 cm
Dried shiitake mushrooms
3 ( re-hydrate in water to make them soft )
Japanese leek
2
Chinese garlic chives
2
King oyster mushroom
1
Beaten egg
1/2
Panko
As needed (about 4 tablespoons)
Flour
As needed ( about 2 tablespoons )
Salt, pepper, nutmeg
a small amount each
Vegetable oil
for frying

Steps

1. Mince all the vegetable ingredients.
2. Fry the ingredients from 1 process with the ground pork and add salt, pepper and nutmeg to it.
3. Boil the potatoes till they become soft and evaporate the water well and then mash and add salt and pepper.
4. Mix 2 and 3 and divide into 4 and shape them like the picture.
5. Coat 4 with flour.
6. Coat with egg.
7. and then coat with panko.
8. Deep fry them in 180 degrees till brown in color.
