No Proofing: Cheddar Cheese Paratha

This thin bread is an Indian dish called "paratha."
It's full of cheese!
It's great as a drinking snack.

Ingredients: 26 cm disc

Cake flour
50 g
Bread (strong) flour
50 g
Grated cheese
1 tablespoon
1/3 teaspoon
Raw cane sugar
a pinch
Black pepper
as much as you like
Vegetable oil
1/2 tablespoon
Lukewarm water
4 tablespoons
Cheddar cheese
6 slices
Melted butter
as needed


1. Combine the cake flour, bread flour, grated cheese, salt, raw cane sugar, black pepper, and vegetable oil in a bowl. Add the lukewarm water a little at a time while mixing with a rubber spatula.
2. Knead the dough from Step 1 with your hands until smooth, gather it into a ball, wrap with plastic wrap, and let rest for about 20 minutes.
3. Dust a rolling pin with flour (amount not included in list above) and roll the dough out into a disc. Break up the cheese and wrap it up in the dough.
4. Set with the seam on the bottom, then press until it is a disc about the size of your frying pan.
5. Heat a non-stick pan, then cook both sides of the bread. When applying the seasonings, melt butter and brush onto both sides. Brown both sides.
6. Slice the bread into your desired size and serve.
