Handmade Pasta Fettuccine

This is a basic handmade pasta recipe with eggs.

Ingredients: 4 servings

Bread (strong) flour
200 g
1/2 teaspoon


1. You just need 3 ingredients.
2. Combine the eggs and salt. Add the egg mixture a little at a time to the flour in a food processor, and mix until it becomes crumbly dough as shown in the photo in Step 3.
3. Put the dough in a container or plastic bag, and let rest for about 10 minutes. The photo shows 8 servings of pasta dough, and 3 servings of Chinese noodles.

5. Different from the Chinese noodles, you have to dry out the pasta a little so that it won't stick together. We hang the pasta on cooking chopsticks to dry.
6. Divide into 1 serving portions (about 75 g) and bundle up each portion in a container.
7. Since I would have to clean the pasta machine afterward anyway, I made Chinese noodles as well.

Fresh pasta is chewy and has a very nice texture. You can make it easily at home.
