Rice with Colorful Autumn Vegetables (Gomoku Takikomi Gohan)

Just whip it up in your rice cooker! This is a mixed rice dish packed with delicious autumn veggies that will whet the appetite. The sweetness of the sweet potatoes are a perfect match with sesame salt.

Ingredients: 2 rice cooker cups' worth [360 ml]

White rice
2 rice cooker cups' worth (360 ml)
Autumn salmon fillets
2 cuts

Sweet potato
200 g (in 2 cm cubes and soaked in water)
Carrot
50 g (1 cm cubes)
Edamame
40 g (shelled)
Shimeji mushrooms
100 g (shredded)
B
Soup stock cube
1
Sake
2 tablespoons
Soy sauce
1/2 tablespoon
Mirin
2 tablespoons
Sesame salt
To taste

Steps

1. Rinse and drain the rice 30 minutes before cooking.
2. Prepare all the "A" ingredients.
3. Put rice into the rice cooker, fill with water up to the 2 cup level mark, mix in the "B" ingredients, add the prepared ingredients from Step 2, and cook the rice on the usual setting.
4. When it's done, leave to steam for 10 minutes without opening the rice cooker, shred the fish and briskly stir, transfer to serving bowls, then sprinkle sesame salt on top.

This is the season for sweet potatoes! And my partner loves mixed rice. The sweetness of the sweet potatoes and the saltiness of the sesame salt are a perfect match.
