Season the salmon with salt and pepper. Thoroughly coat the fillets with flour.
Spread sesame oil in a pan. Fry the coated salmon fillets.
When the salmon is cooking, finely chop the leek.
Serve the grilled salmon on a plate and top with the chopped leek. Sprinkle on a little bit of ponzu to taste.

Salmon cooked in butter is a little heavy at my stage of life, so I made a recipe that is delicious and refreshing.
In Step 2, fry until one side is golden brown before turning over and cooking the second side. Add a little sake (or water). Cover with a lid and steam to thoroughly cook the salmon. I think the dish is best with lots of sliced leeks on top.
