Preparation of Daikon Radish for Making Oden Hot Pot in a Pressure Cooker

In just 15 minutes, you can make your daikon radish taste as though it had been soaking in flavors since the previous night.

Ingredients

Daikon radish
1/2
Dashi stock granules
4 g
Water
1 cup (200 ml)

Steps

1. Cut the daikon radish into 2-cm thick rounds, then peel the skins. Shave the sharp edges of the daikon with a peeler.
2. Arrange the daikon in a pressure cooker, add the dashi stock granules and water, cover with the lid, then heat. Once the pressure cooker valve starts to jiggle, reduce to low heat and cook for 15 minutes.
3. Turn off the heat, and set aside until the pressure releases naturally. Stew them up with other oden items in oden broth and enjoy.

Story Behind this Recipe

I figured that since "buri daikon" (stewed amberjack and daikon radish) tastes good made in a pressure cooker, so would daikon radish for an oden hot pot.
