Mix all the ingredients marked ★ to make the sauce. Prepare the 8 slices of cheese.
Spread the hanpen out in a non-stick frying pan without oil, and bake until browned on both sides.
Sandwich cheese between the hanpen on a plate.
Pour the sauce from Step 3 over them evenly and top with the nuts for decoration.

Story Behind this Recipe
The cheese slices are about the same size as a 1/4 slice of hanken, so I tried making sandwiches. I thought that colourful and fragrant basil sauce would go well with this, so I tried it.
In Step 3, if you sandwich the cheese between piping hot slices of hanpen, the cheese will melt to just the right texture. Mind you don't burn yourself! If you can't use homemade basil pesto, store-bought is fine.
