Spread the enoki mushrooms out on the bottom of a deep heatproof dish.
Spread the maitake mushrooms on top, to cover the enoki mushrooms.
Cover with plastic wrap and microwave for about 3 minutes.
Take off the plastic wrap carefully so you don't burn yourself. It looks like this.
Add the ponzu and soy sauce while the mushrooms are still piping hot.
Top with bonito flakes and green onion and serve. Mix well before eating.

I wanted to eat a ton of mushrooms in a healthy way...
I used maitake mushrooms this time, but shiitake, shimeji, etc. are all delicious. But it is better with enoki mushrooms in the mix. If you go easy on the ponzu, this is delicious with olive oil on pasta.
