Autumn Salad with Sweet Potato and Apple

An elegant salad with the flavors of fall, dressed with a cream cheese dressing.

Ingredients: 2 to 3 servings

Sweet potato
100 g
2 slices
1/2 small
4 to 5 kernels
Lettuce, arugular or other leafy greens or herbs of your choice
As much as you like
For the cream cheese dressing:
☆ Cream cheese
20 g
☆ Honey
1 teaspoon
☆ White wine vinegar or rice vinegar
1 1/2 tablespoons
☆ Salt
a small amount
☆ Olive oil
1 tablespoon
Black pepper
to taste


1. Make the dressing: Soften the cream cheese by microwaving it for 10 seconds. Mix the ingredients marked ☆ in the order they are listed thoroughly.
2. Don't peel the sweet potato and apple; cut them up into 1.5 cubes. Put the sweet potato cubes in a bowl of water, then steam or boil. (They taste better steamed.)
3. Dry-roast the walnuts in a frying pan with no oil, and chop up roughly. Cut the bacon into 5 mm wide strips and sauté until crispy in a dry frying pan.
4. Wash the lettuce and/or other leafy greens or herbs you are using and dry well. Put them on a plate, and top with the items from Steps 2 and 3.
5. Pour on the dressing just before serving, and top with black pepper. Enjoy!

I used sweet potatoes and apples which are delicious in the fall, combined with a cream cheese dressing that goes very well with their flavors to make a filling salad.
