Burdock Root and Tofu Soboro

This is a tofu soboro for vegetarians that's so delicious, you might even start to think it's better than meat! The burdock root is crunchy and tofu is fluffy.
You can mix in any vegetables you like.

Ingredients

Burdock root
1/2
Firm tofu
1/2-1
Sake
1 teaspoon
2x concentrated mentsuyu
about 50 ml
Water
50 ml
Grated ginger
1 small piece

Steps

1. Mince burdock into squares and put in a pan with tofu. Stir in sake and fry tofu and crumble.
2. Once the sake has evaporated, add mentsuyu, water and ginger. Cook until the sauce is reduced.
