Bacon Wrapped Egg Plant and Cheese

Bacon Wrapped Egg Plant and Cheese

Enjoy melting cheese flowing out of the crusty bacon.
I made an easy appetizer from my favorite combination that's usually found in pasta.

Ingredients: 2 servings (4 wraps)

Eggplant (small Japanese variety)
2 slices
Half-strip of bacon
4 teaspoon
●Grated garlic in a tube
About 5 cm
1/2 teaspoon
Olive oil
As needed

1. Make thin lengthwise slices of the eggplant, and soak in water for roughly 5 minutes. Drain, then cover with plastic wrap to microwave for 1 minutes.
2. Top the bacon with halved slice of cheese and eggplant. Mix together all ● condiments and pour over the eggplant.
3. Wrap it up so that the bacon will be on the outside. Secure with two toothpicks. If you place the cheese and eggplant closest to you, it will be easier to wrap up.
4. Heat olive oil in a pan and pan-fry the bacon wraps. When both sides are browned, remove from the pan. Slice it between the toothpicks, and serve.

Story Behind this Recipe

I was thinking of a recipe to enter the for half-strips of bacon.
I love the combination of eggplant and cheese, even in pastas!
I knew it would also be tasty even if wrapped in bacon.
