Sweet Potato and Enoki Mushroom Stir Fry with Oyster Sauce and Mayonnaise

The sweetness of the oyster sauce and mayonnaise with sweet potato is terrific.

Ingredients: 2 servings

Sweet potato (medium)
1 (150 g)
Enoki mushrooms
100 g
★ Mayonnaise
1 tablespoon
★ Oyster sauce
1 teaspoon
★ Soy sauce
1 teaspoon

Steps

1. Cut the sweet potato in half lengthwise then slice into 5 mm slices. Soak in a bowl of water for 10 minutes. Drain, cover loosely with plastic wrap and microwave for 3 minutes at 500w.
2. In the meantime, combine the ★ ingredients. Cut the enoki mushrooms in half and shred.
3. Heat a pan with 1/2 teaspoon of oil and add the sweet potato and enoki mushrooms. When the enoki mushrooms have wilted, add the other ingredients.

Story Behind this Recipe

After receiving sweet potatoes as a gift, and I was wondering what to do with them when suddenly I received another batch.
I usually make tempura but there was too much for that, so I created this new recipe.
