Cut the sweet potato in half lengthwise then slice into 5 mm slices.
Soak in a bowl of water for 10 minutes.
Drain, cover loosely with plastic wrap and microwave for 3 minutes at 500w.
In the meantime, combine the ★ ingredients. Cut the enoki mushrooms in half and shred.
Heat a pan with 1/2 teaspoon of oil and add the sweet potato and enoki mushrooms. When the enoki mushrooms have wilted, add the other ingredients.
Story Behind this Recipe
After receiving sweet potatoes as a gift, and I was wondering what to do with them when suddenly I received another batch. I usually make tempura but there was too much for that, so I created this new recipe.
By microwaving the sweet potato beforehand, the stir fry time will be shortened.
