Farmhouse Recipe: Homemade Nametake Mushrooms

You can make delicious homemade nametake (marinated mushrooms) in just 7 minutes with enoki mushrooms with my all-purpose dashi soy sauce, sugar, and vinegar.

Ingredients

Enoki mushrooms
200 g
A
All-purpose dashi soy sauce (Recipe ID: 1236017)
3 tablespoons
Sugar
2 teaspoons
Vinegar
2 teaspoons

Steps

1. For the dashi soy sauce, refer to Recipe ID: 1236017.
2. Remove the root ends of the enoki, brush off the dirt, cut the stems in half, and break into clumps.
3. Cook [A] on medium heat until it reaches a boil, then add the enoki.
4. Boil for about 7 minutes on medium heat. It's done when the liquid has mostly evaporated.
5. Serve over rice.
6. It's also good served with grated radish.

I used to make this using soy sauce and dashi, but then I tried it with my homemade soy sauce and it was even better.
