Milk Pudding with Agar

Milk Pudding with Agar

Here's a recipe for milk pudding with agar that doesn't turn to a liquid at room temperature. The nice texture is different from pudding made with agar-agar or gelatin.

Ingredients: 4 servings [144 kcal /serving]

Milk
500ml
Agar
10g
Sugar
30g
Condensed milk
2 tablespoons

Steps

1. Mix the agar and sugar well. If you skip this step, the agar will not dissolve.
2. Combine Step 1 with the milk and condensed milk in a pot and lightly bring to a boil.
3. Strain with a fine mesh strainer and pour into a bowl. It will set at 140F/60C.

Story Behind this Recipe

I love the texture of agar. Since it's suitable for bento, I use agar almost everyday.
