Honey (If you don't have, increase the sugar by 15 g)
Put the butter in a heatproof dish and microwave for 30 seconds.
Combine the egg and sugar and with a whisk and mix.
In the bowl from Step 2, add in the butter and mix it in well. Add in the honey, mashed banana and mix well.
Take the ingredients marked with a ★ and sift. Switch to a rubber spatula and mix lightly.
The dough will be a little dry, so mix in the milk.
Pour into doughnut moulds and bake for 17 minutes in a preheated oven at 350℉ (180℃).
(If using a silicone tray, cool a bit and them remove from the tray.)
(if you want to make chocolate or matcha doughnuts, decrease the wheat flour to 50 g, and add about 10 g of cocoa powder or matcha. Dark chocolate gives a more mature taste).
Story Behind this Recipe
My favourite treat is doughnuts! After lots of trial and error, I managed to mimc the taste of Mister Doughnuts! Unfortunately, when I originally tried cooking them in my 2 silicone doughnut trays they didn't work at all (The above picture shows what happened when I took them out of the tray. It was too late, and they didn't come out as nicely as I wanted.)
They are very soft freshly baked, so if you are using a silicon tray, let them cool for a little bit before removal. Let them cool properly, and they will have a really smooth surface. By the way, I used a metallic tray. Use a ripen banana for ultimate results.
