Finely chop the garlic. Stir-fry the garlic until fragrant over low heat in a pan. Add the mushrooms.
Stir-fry the shimeji mushrooms until wilted, then pour the soy sauce on the hot surface of the pan and mix in. Add the butter and pepper to finish.
Story Behind this Recipe
My middle school son brought home garlic from Aomori prefecture when he went to work at a French restaurant. (Note: Aomori is renowned for its garlic). My son loves king oyster mushrooms and maitake mushrooms, is so-so about enoki mushrooms and hates shimeji mushrooms - I don't quite understand his weird taste. I only had shimeji mushrooms in the house, so I cooked them like this and got a "Yum!" from him.
I recommend stir-frying the mushrooms in olive oil. Don't let the garlic burn! Add king oyster mushrooms, shiitake mushrooms, maitake mushrooms or any other mushrooms you like to increase the volume! Add a red chili pepper to make a spicy version. Great mixed with pasta!
