Tender Spare Ribs

Tender Spare Ribs

20 minutes in a pressure cooker, and you have really tender spare ribs that taste better than the ones you get in a restaurant.

Pork spare ribs
350 g
As needed
★ Sugar
3 tablespoons
★ Sake
1 tablespoon
★ Soy sauce
2 tablespoons
★ Ketchup
1 tablespoon
Grainy mustard
1 tablespoon

1. Heat up a frying pan and cook the spare ribs on both sides until lightly browned.
2. Transfer the spare ribs to the pressure cooker. Add water - about half the amount of the meat. Bring to a boil over high heat, and skim off the scum.
3. Add the ★ ingredients, put the lid on and cook over high heat until it comes up to pressure. Turn down the heat to low and cook under pressure for 20 minutes. Turn the heat off and leave until the pressure comes down.
4. Take the lid off, and cook to reduce the sauce.
5. Add the grainy mustard, mix and it's done. The spare ribs are very tender, so be careful when you're transferring them to serving plates.

Story Behind this Recipe

I wanted to eat tender, fall-off-the-bone spare ribs.
