Curry Flavoured Chicken Breast Piccata

You can make about 4 servings with 1 portion of inexpensive chicken breast.
Pound the chicken to tenderize, then marinate in sauce. Coating with beaten egg makes the chicken very moist. It's still tender even when it's cooled.

Ingredients: 4 servings

Chicken breast
1 (300 g)
★Egg
1
★Katakuriko
1/2 tablespoon
★Milk
1 tablespoon
☆Ketchup
2 tablespoons
☆Soy sauce
1/2 tablespoon
☆Curry powder
1/2 teaspoon
☆Pepper
a small amount
Mayonnaise
to taste

Steps

1. Cut the chicken breast in half lengthwise, and slice diagonally into pieces. Pound with a rolling pin and make it thinner. This helps the chicken become tender.
2. Add the ☆ ingredients into a plastic bag and rub everything together to mix. Add the chicken breast from Step 1, and marinate for at least 1 hour in the fridge.
3. Combine the ★ ingredients in a bowl. Add in the marinated chicken, and mix in the beaten egg.
4. Heat up a frying pan. Swirl on some mayonnaise instead of oil to grease the pan, and fry the chicken breast from Step 3.
